Damse Brie

Our Damse Brie cheeses are soft bloomy rind cheeses made from pasteurised organic cow's, goat's or sheep's milk. They are matured in a special ripening chamber that offers the perfect degree of humidity to encourage the white mould to quickly develop on their rinds. After twelve days of ripening, our Damse Brie, Goat Brie or Sheep Brie cheeses - flavoured with herbs, pepper, truffle, flowers or rosemary - are each given their specific finish. after packaging, the cheese is allowed to mature a bit longer before it is ready for sale.

Damse Délice 

Our Damse Délice cheeses are soft cheeses that owe their unique flavour and exeptionally creamy texture to a special production process and the ripening cultures carefully selected by our master cheesemakers. They are made from pasteurised organic cow's milk sourced exclusively from Belgian Dairies in the Damse Kaasmakerij cheese factory in Damme This family-owed and operated business is committed to guaranteeing a sustainable production process. After ripening for about two weeks under perfect humidity conditions in our ripening chamber, the cheeses are ready for sale. The longer Damse Délice cheeses are left to ripen; the more intense their flavour, Damse Délice cheeses have an organic rounded shape and weigh 150 grams as a standard

Damse Mokke

Our 'Damse Mokke' cheeses are soft bloomy rind cheeses with a lovely, rounded shape and an exceptionally creamy and sophisticated flavour. They are made from pasteurised organic cow's, goat's or sheep's milk. Our Damse Mokke cheeses are ripened in a special ripening chamber that offers the perfect degree of humidity to encourage the white mould to quickly develop on their rinds. After packaging, the cheese is allowed to mature for a few more days before it is ready for sale
